A bit of a necro there, but I'll bite. The hidden stats are the "Collapse" and "Amputate" abilities. Collapse is a mobility/defense debuff (broken legs for example) and is attached to warhammers. Battleaxes have a better chance to remove limbs/head from victims.
Also, "amputate" sure sounds a lot like the same thing as "remove limbs/head".
Old information from the devs, hidden in the threads of time by this point. There haven't been any changes listed in the patches about it.
And yeah, amputate is a fancy word for limb removal. Swords also have an innate Amputate ability, you'll only ever see Collapse from warhammers(or clubs) or weapons specifically enchanted with Collapse.
Kobold spears don't have collapse or amputate, instead they get a damage bonus to mounted units/mount units.
Bows don't have an innate ability, just range. The instant-kill Heart Shot and Eye Shot are unit's random abilities (harpies and dryads/elves have these).
