what are the advantages and disadvantages or assigning a chef to a recipe ?
Do their skill improve over time ? Is the food better ? And does it interfere in time to make the food ?

Yes, their skills improve over time. They'll prepare the meal every time it's ordered. With a good chef that can become your signature course at one of your restaurants.

Simply put the better a chef is at making somthing the higher the quality the dish will be when served meaning higher satifaction/competition scores . You want to be careful with high traffic dishes though or your chef will fall behind .Early on its a good idea to have Armande specialize in dishes with 2 or more flags since you'll be moving him around a lot. The better a chef is at a particulare cuisine the better they will make individual dishes in said cuisine even if they've never made one before .

there's also another benefit. When one of your chefs masters recipe to 100% you can assign this recipe to another chef and he will learn that recipe much faster, in 3-4 game days. if you'll let them to cook it together with 30-50% skill it will take ages to master it because there will be no boost. I ussally assign 5-6 recipes to 1 chef till they master it, then I reassign it to less skilled chefs and so on. This way your chefs will be skilled in no time

Negative: It can cause a back log of dishes needed to be prepared. So keep an eye out if that dish is very popular. This causes food to arrive late.
I found most dishes come in sets - appetizers/soups --- mains -- deserts. THus try and spread out designated dished. DOn't have one chef doo all deserts etc.

definitely, you can't assign all recipes, assign 1-2 recipes per category to 1 chief and leave other recipes unassigned, that way even if the dish is popular your 2d/3d chef will have something to do.
