For starters: For oil/ petrol facilities a Crack and Burn approach using an explosive (500lbs) with incendiary is alway good choice. Airfield target need max coverage on runway so something like single load out of lots of 100 or 250lbs bombs. U-boat pens : Armor piecing. Troops, headquarters, communications, V2 sites : explosive& AntiPersonnel.
Of equal importance is where on the actual target to aim ( not easy) and the intervalometer release settings ( bomb delay) set during the mission. These can be partially determined calculated from good recon films. Knowing the recon altitude and speed you get rough target length. Then adjust trail based on ord type and you expected bombing altitude. Keep in mind too that there is a trade off of fuel with ord loadouts as distances to targets increase.
In game you, as bombardier in the leader can go to the intervalometer and make release changes to your bomb load. Once that is done, you can have better control over your target damage.
But to answer your question on loads for targets, Airfields are long and spread out so the more bombs you carry with a setting to spread your release the more damage you can likely do. Avoid anti-personnel types as I see it there are no personnel at the targets to be affected. 250 pounds or 500 pounds will get the job done for airfields.
The more compact the target, the tighter the bomb drop, (usually salvo,) and depending on the type of target, the type of bomb. Bridges and the like use semi armor piercing, with everything else a combination of armor piercing or semi armor piercing will work. Sub pens of course are under tons of concrete and therefore the largest armor piercing types should be used.
