They do. I like the crystal ones the most since they are range attack. Though they work best when Stone can provide tank support. Wood do both melee and range, they are also the easiest ones to start upgrading. If you can upgrade the golems early and often they will make corruption attacks a none issue... until you realize you slacked on increasing your defense and you lose your whole village but that is another discussion.
I often will build them in sets of 9. Not often all at once since fewer buildings that are upgraded are better then more buildings that are not upgraded. Three of each resource so I can have one of each magic damage type (final upgrade). They are also the first defense I build. They are so dynamic because they will engage any enemy in your village's range. They also make easy use of energy that you might otherwise have to micro manage the use of. Though you may find they suck up all your energy if you build them to quickly. Yet I see that more of a first world problem. You will also find them super effective by placing Fire Pits in a way that it extends your villages range. This means they will move to engage the enemy before the enemy reachs your builds and villagers. This should buy you enough time to decide where to create your defense wall also know as a kill box. Combined with the Fire Pits extending your village range, this means you can leave some room to expand your village later if needed. Just be careful you don't extend to far as it will mean it takes longer to get your kill box setup and this can result in your defenses not scaling as quickly as the corruptions attack power.
slime 11-12
skeleton 24-25
everything else 29-30
The actual level cap atm is 200, but monsters won't spawn at that. If they somehow managed to survive and not despawn for long enough, they could reach it eventually. Villagers too, if you keep going long enough.
EDIT: I just thought to check, I don't have any perks for golem levels yet either.
