You can do a lot of crafting/gathering but chances are that you will get into PvP situations anyway.
Been trying that, have been failing with an alarming degree of consistency.
The game would be marvelous as a PvE (or even solo) - and a far more pleasing experience, given the skill gap between the newbies and the expirienced players.
To devs' credit: nation allegiance system prevents some of the ganking (i.e., bullying or targeting the inexpirienced / non-aggressive enemy players for loot), but get out of the capital city safe zone or go elsewhere on a quest, and you are as good as dead and robbed.
Just by means of example: you would like to further your crafting skills and decide to grow flax and process it into cloth and eventually, light armour. You find yourself a spot to grow plants with a crafting station nearby, preferably the one near capital city safe zone. Enemy players decide to show up for a raid, and you get your ass handed to you. Not your crops, though, because they destroy those. The game is quite enjoyable right to the extent when someone beats the crap out of you without provocation (or reason). Looting your 70 buckets of water couldn't possibly be the reason, right? :D

They are polishing the MMO off at the moment, and they might eventually develop a singleplayer thing.
Lastly, if you feel good about this setting, don't hesitate to give Gloria Victis: Siege Survival a try - it's also well-round singleplayer game of medieval survival (albeit not an action RPG).
