Quest or Lair Difficulty?
Any way to tell whether I am getting into something I can handle or not?

Trust the recommended level for region quests. Make sure your whole party is up to it, especially the black quests. I recommend finishing the Reikland region before doing the 1st region's black quest, then do Reikland's. You can venture in Averland before trying those black quests to get a few nice orange items from white quests, but it might be perilous depending on your level of confidence from your experience with the game.

White quests difficulty follow your party levels, but also seem to loosely follow the difficulty of the region quests of the settlements you are around of.

Edit; White quests involving Undead might show to be the hardest in the beginning. A good sign that you are ready to tackle those more smoothly is once you feel comfortable in dealing with orc shamans.

What do you mean "recommended level"? I don't see any such recommendation.

I also don't understand what the color codes mean :(

Oh, wait. I do see the recommended levels now - but only for some. Others do not have the recommended levels.

And I still don't understand what the colors mean. I only see red and white for now...

Red are the region ones. They come from story stuff in the settlements. White are the travel quests, you don't need to do them to go between settlements once you've traveled the path at least once. Black quests are the final quests of each region. There is an additional final one after the one of Averland is done.

Edit; Difficulty of red and black quests is pre set, hence them having a recommended level.

Ah, ok. Thanks. What's the best quests to grind XP and gear/cash? Or does the "Reset Quests" button enable me to quest infinitely?

White quests for gear. Everything for exp. Use the white ones to level and equip yourself up to the recommended levels of red ones. You can also explore the regions more to see if different settlements offer red quests of lower level than the one you're at if it seems too high. As in, there's no order to follow for most of the red quests, only a few of them are like successions of previous ones.

Reset quests is for the red ones. Some of them have slightly different outcomes possible, and some of them give nice usable items that you might want to get more of. It will basicly be as if you hadn't gone through the regions. You can redo the black ones without reseting.

Edit; If I recall right, reseting only does it for the settlement you're in, but it might be for the whole region at once, not sure.

Great info - thanks as usual!
