Lego Star Wars 3: The Clone Wars is more modern and has you playing the events from The Clone Wars series. Mind you, not the entire show, but the first couple or few seasons.
The Skywalker Saga is the most modern with some features from modern gaming (like taking cover and third person shooting). They span films 1 - 9. However, it does not include the events from The Clone Wars series. The Skywalker Saga also has character packs including other products like Rogue One, Solo and Bad Batch.
Does that answer your question?
That does, thank you!
