You can replay the game and find the secrets and whatnot, find better guns, etc...but that's it for now.
NG+ lets you replay everything. Mind you that you no longer get skill points from quests on the 2nd run of the game and from then on you get Cash, any weapons you didn't pick the first time, and Orbs of Masamune.
The Orbs are apparently used, in the future, with an anvil to upgrade your weapons somehow. We haven't gotten any more details about that feature yet.
The reason why people go with a Crit% and CritDMG build is that most enemies in the high difficulties (Insane, +, ++, +++, ++++) will likely have an immunity to one or more elements and even physical damage too. However you can get a skill and upgrades the reduce enemy resistances so their not immune. The thing is that Crits multiply your damage and you can that multiplier up to several hundred % whereas elemental damage is flat damage.
So you either can build multiple weapons later on and have to farm around for really really good elemental mods for all of them or you just get the 2-3 of the really good swords and build crit on them plus a lil bit of elemental just to get passed some immunities.

I'll say though that the game is worth picking up. It's not that expensive and if you owned the earlier game(s) you get a discount on it. However, waiting a bit while keeping an eye on the game's updates isn't a bad idea either as most games tend to get discounts withing a few months after their release and there's bound to be more updates to this game to bring about more content for sure.
Basically, you get low-level loot, crap money, ♥♥♥♥ karma, and can just fly through levels. It doesn't make sense to me to not have the loot stay its course and make the mobs match your level. NG+, i guess, is useful for missed secrets and these mysterious "orbs" soon to come...
Element immune enemies are unable to be damaged by said element, even with high vulnerability and maxed Elemental Knockout. Once Immune, always Immune.
Once you finish the game, start a new game on that character rather than resuming.
