I believe only some of the galactic conquest maps have deadlines. Check the objectives of your map to be sure (they are given at the beginning but you may have simply clicked OK and gotten on with the game).
In such quests, they usually give you around 60 days. It's not that unreasonable, but it's still there.
While others have unlimited time, with these victory and lose conditions:
Victory conditions:
EaW:
If playing as the Empire: death of Mon Mothma or if the Alliance is removed from the galaxy.
If playing as the Rebel Alliance: death of Palpatine, destruction of the Deathstar or if the Empire is removed from the galaxy.
FoC:
As any faction: total control of the map and removal of both opposing factions.
Lose conditions:
EaW:
If playing as the Empire: death of Palpatine results in a loss, destruction of the Deathstar results in a loss or loss of the map results in a loss.
If playing as the Rebel Alliance: death of Mon Mothma results in a loss or loss of the map results in a loss.
FoC:
If playing as the Zann Consortium: death of Tyber Zann results in a loss.
As any faction: any of the opposing factions gains total control of the map.
If my memory serves me correctly.
