I use them as part of a fleet, I'll use the Empire as an example. Have a core group of Star Destroyers (which type depends on what you can afford for that fleet) with fighters forming a screen ahead of the SDs. The Tartans (the Empire's corvette) generally stick close to SDs and form a quick reaction force.
If the enemy throws fighters or bombers against me, the Tartans rush forward to blast them quickly, before falling back closer to the SDs. If they send corvettes, the fighters withdraw and the Tartans push forward to engage them long enough for the SDs to blast them. If I'm up against capital ships or frigates, the fighters swarm to maintain fighter superiority, the Tartans hold back so they don't get squished, while the bombers rush forward to take out the heavy weapons and shields on their heavies so they're nice and softened up for my big guns.
It's all about having the right tools for the job. If you're getting overwhelmed by fighters, either increase the number of corvettes to kill them faster, or deploy fighters to distract the enemy fighters while the corvettes cruise around blasting them out of the sky. How you react depends on how you're playing.
