How to deal with correlian gunship, and rebel starfighter spam.

A couple of tier 1 frigates should be able to hold their own against gunship spam. Ensure that you are sending your fighters in front of the bombers so that the bombers survive longer. TIE Fighter Hunt ability helps a ton when dealing with a ton of fighters, because it tells them to go find their own targets (which will always be other fighters unless there are none on the map).

The best way to counter starfighter spam I know is... Tartans. That damage boost can be deadly if the enemy isn't paying attention to them. Most of the time, they don't.

I think it kind of depends on the amount of gunships we're talking about. If they have 4 or 5 on the field at once, they can take on much larger ships pretty easily if they target the right spots. Imperial Victory Star Destroyers pack enough firepower to deal with them quickly and the Consortium's Vengeance frigates don't have shields so the advantage of shield-bypassing weapons doesn't mean as much. In a fair 1v1, basically any frigate or a few squadrons of fighters and bombers should work.

For the fighter spam, I like to play defensively. Placing a couple of corvettes around your cruisers and frigates should keep any bombers off of them.

I always took more of a "phalanx" approach to it; group your corvettes and frigates in a tight formation and push ahead. The corvettes do so much DPS that even against larger ships they can wear shields away quickly; while the frigates blast chunks out of anything left.

Fighter screens may work if you have bulk; just be wary of groups of corvettes since they will chew thru them. They can also do a number on unshielded frigates.

Basically have the frigates and corvettes screen for the fighters/bombers; while yours follow close behind and mop up.
