When you first open the game, and it asks you to sign in or create a new account, choose the "create new account" option. It'll take you to a new window. Scroll to the bottom of this new window and there is an option, highlighted in blue, that says "create local account instead" or something to that effect. Choose that, then it will ask you to type in a username. Type in whatever -- this is what your "name" will be for scoring and such, but it doesn't matter what you put in.

After that you should be all set!

I don't know why, but I had no problem logging in with my Microsoft account, and I can see the trophies I earn in the Xbox app.

I typed my email address, didn't touch the password field like the other comment said in another thread. The game would minimize for a prompt if I want to allow this game to access the internet -> clicked yes and I was in. Played for a while, quit the game and came back with the game continuing where I left off.
