How to play Moto Racer 2 in widescreen!
just plug these into your custom resolutions list:
896x504 (16:9)
1024x576 (16:9)
896x560 (16:10)
1024x640 (16:10)
these should all be under the 1024x768 limit and (theoretically) should pop up in-game.

My monitor is 1600x900, but neither of the 16:9 resolutions show up as options.

did you add the resolution to your operating system?

You probably need to use Custom Resolution Utility then. And remember to do a restart.
