If you wonder why all the anti-aliasing options are gone (like MSAA)...
...and why the game looks like more like Jaggies Simulator 2025 than GTA V.

Apparently MSAA is not cool and trendy anymore. Anti-aliasing nowdays is done by DLSS option called DLAA (for RTX users). AMD users can try to fiddle with FSR options, i guess. GTX users, my condolences to you.

the game has traditional super sampling still though if you don't like the upscaling options
I mean, FSR works for GTX users as well... but I didn't know they got rid of MSAA

MSAA being gone doesn't really matter, it didn't work well on GTAV before.
But the loss of FXAA over Vaseline TAA is pretty bad.

FSR3 NativeAA isn't as bad as regular TAA, but it's blurrier and costs the same as FXAA+slight resolution bump (ie. rendering at 3072x1728 on a 2560x1440 display)

I would guess it's because MSAA was quite demanding when compared to other techniques of anti-aliasing (e.g. FXAA, TAA)

MSAA is only demanding on games with Deferred rendering, as you need to apply MSAA to *every* framebuffer, Legacy has something around 60 different frame/g/z/depth/reflection hemispheres/etc buffers.

Forward rendered games just paint over a single framebuffer, MSAA is cheap there, it's what phones/mobile games use now, 20 years ago it was hard.

If I am not mistaken, those option are now under frame scaling tab, and you still have to use upscaling to enable them (there are no x1.0 option).
