tl;dr/lazy - use this link below to contact R* without logging in to RECOVER the already linked social club account/fix/change email to one you have access to. Many hoops to jump to prove you're the owner, have steam account, cdkey etc, and roll the dice on help-

Also, when you make a ticket - make sure to use a functional email, not the old one. They may ask you to confirm ownership of the email you used and not be explicit about it. Ask them to clarify if necessary. I also wouldn't use the word 'unlink' - as they have a different process for 'unlink' and that may confuse them. Just ask them to change the email on the social club account to one you have access to.
There's even live chat, or phone callbacks - IF they are enabled. You need a throw away social club account to access them as they require you to be logged into the website last time I checked. YMMV with those too.. obviously.
/goodluck - for some it is a couple hours, others days/weeks, multiple tries.
edit - if they keep closing tickets on you, you are doing something wrong, answering wrong, not doing something they request, properly giving what they request, etc. do not get wordy with them. be simple.
You find your earliest achievements on all 3.. 4.. games.. whatever. You then compare those date with the game purchases dates in steam. IF the dates MATCH, those dates could be it. Starting with 'the earliest one'. If the days do NOT match - say you got gta5 on the 6th, and first achievement is on the 16th.. that is 10 possible days.

I spent most my life working retail for big companies not only do people who say this come back 2/3 of the time they won't look you in the eye when they do it if you were the employee they said it to lol Its like damn you didn't even make it 4 days I figured a week at least before you caved sigh...
