How the hell do you beat Whis and Beerus

They kill Trunks really fast and then come for me, its practilly impossible im level 43 and can barely get one of there health bars down

Surely i should be fine at my level? Its been quite easy up untill this battle

Depends on several factors.
What you allocated stat points into, what style you're playing and how good you are at the game.
I failed the mission the first 2-3 times and then beat it.
Some missions are just more punishing than others, there is no real difficulty curve to the XV storyline.
Check what level Beerus is with your scouter. I don't think you should "be fine" at 43, I think you're at the lower end of the beatable spectrum.

Ive sort of evened out my stats so theyre relatively at the same level, I shall have a look and try to level up

I'd personally focus on maxing out whatever you're using for primary damage.
I went for a melee build, so I put around 40ish point into stam, then maxed out Basic Attacks, finished maxing Stam and put the rest in health.
There is no real benefit to going a "jack of all trades" build and it'll be reflected in your damage output.

Get the destructo disc ultimate that follows and the "I'm neither Kami or Piccolo" z soul. They'll beat you up good but your ki will fill then fire off the destructo disc ultimate or just fly around to heal. Also, instant transmission is good for dodging ultimate attacks.

I beat them at level 36 with a melee-focused Namekian.

The only difficult fight in this game is the protect Bardok mission, imo. Even Broly afterwards was easy compared to that. Super Saiyan Bargain Sale was pretty easy, as well as the Ultimate Battle one where you fight pretty much everyone in a row, forgot what it's called.

Collect all 5 Crystal Time Shards.

You get one when you clear story mode.
Another is from the NPC Recon on the screen with the dragonball pedestal. The other 3 are from quest drops.

I just rammed on Beerus with basic attacks and guard breaks, Whis tried to interrupt few times but it was a cake walk.

Just farm the piccolo-kami z-soul and you will never die ever again.

Yeah, Whis and Beerus was the first story battle I had real trouble beating - so I figured I needed to go level up some more. Wasn't too far into leveling when I realized I wasn't too far from having the "Wrath of the Namekians" Z-soul, which isn't quite as good as the piccolo-Kami soul, but was enough to get me through the story mode. Just look in the mix shop at the recipes and note the ingredients, then go find the parallel quests with those ingredients.

Looked up how to get how to get the Piccolo/Kami Z-soul and using it in battle is really good, im going to get to about level 60 and try again, Beerus and Whis are level 68 when i checked
