The blocking- I use After image a lot to counter evasive skills since I'm melee and have to be close range. Takes no stamina or Ki.
If you are having problems with the vanish (like everyone is since it's a bug) just get the hang of doing if you see them leading in a certain direction. it will place you out of the combo. OR use your evasive skill.

You need to keep in mind that the AI can use Evasive Moves in cases where the player character can not. So just because you see an AI use it to counter everything you toss at it does not mean you will be able to do the same.
Also if you bring your master (in your case Vegeta) with you on PQ their respect bar goes up a bit faster.

Yes it takes a bubble/bar of stamina, good luck with your eyesight goals keeping track of that and the action on the screen at the same time though
Left Button + Y, when the person fighting you gets deep. It's really handy.
