So what exactly is canon for Dragon Ball?
I was always of the opinion that if it was not in the original manga, then it was not canon. Is this the correct line of thinking or not?

any work created or accepted to be part of the canon by the original author is canon to me.

Basically whatever toriyama says is canon
Dbzbog is canon and since it mentions vegeta's brother vegeta's brother is also canon
i don't know if in the new movie broly is in but if it brings any old enemies it makes them canon just not their movie

The way I see it, if Akira Toriyama had a hand in the development of something, then it should be considered canon, unless he stated otherwise. In terms of GT, he did not write it nor is it based on his work, but he did however have a hand in it's production (coming up with the GT name and even designing some characters), and I think he approves of how that series went, so I'm sorta stuck between whether it's canon or not.

it is canon, it's just in a different universe.

Thats the purpose of Xenoverse and everything it brings. Its to bring it all together within the realm of possible.

No such thing as an official canon in Dragon Ball, regardless of what fans will tell you. If you take all of the franchise to be canon there are major issues with consistency and such so you can alternatively consider manga, anime, movies, GT, DBO, etc., to all be their own exclusive universes. I would not mix them together because there are some significant differences between them (e.g. Future Trunks attains Super Saiyan when Gohan dies in the anime but in the manga he was already Super Saiyan at that point, manga heavily implies Gohan/Gotenks is stronger than Goku in the Buu Saga but anime fillers and different dialogue adds implications for Goku being stronger which was never a thing in the manga).

Official canon - everything (utter bullcrap and contradicts itself in like two dozen occasions), fan canon - only manga stuff and OVA (Ossu! Kaette Kita Son Gokū to Nakama-tachi!!).
