Second, there are many ways to achieve this. You can change your dosbox config file. You can turn off your speakers/adjust your sound mixer to mute the game only. :) Or you can run the game in ScummVM and type (ctrl-t) I believe to switch between speech and text. The last does not turn off the music I don't believe.
PS text can be turned off and on with F9.
