Loot + Dungeon question.
When I encountered my first boss battle and when it was slayed, there was no loot.
Could the party member have stolen the loot whilst I was watching the cut scene?
Is it possible?
Newbie to the game here, yes.

Highly unlikely. Any loot worth having has to be rolled for.

If there is one or more ppl in your party that's way above the max level of the dungeon, that would greatly reduce drops as well.

If it's a pre-made party where people setup free-for-all looting, then yes, they can technically just loot all without any rolls being done. This practice is extremely rare, but is a good reason why you should always check the loot settings (little icon under your name) when joining any parties (even through match maker). If the loot is set in a bad way, call them out on it.

As for the reason why loot might not have shown is because either nothing above green quality dropped (which happens depending on levels and luck), or that loot settings were for class-restricted and it was quickly rolled for by someone in the party who was of a class that could use it.

That said, don't get too hung up on loot in dungeons. While it might seem like a big deal, while leveling you generally only use that equipment for a few hours at most. Often you're best off just using superior (blue) grade armor and avatar weapons and just selling or dismantling everything else. Not only will you have more gold available at 65 to pay for your crystals, you'll also probably have spent less time farming or arguing over equipment.
