Only tricky situation is if you deplete the availabel sources prior develop and/or build those mining versions - so plan ahead (eg. get and build sawmill before you gather last wood crates..) If you are stuck you must rely on scout parties or dismantle some buildings.
Onyl finite resource are steam cores that can be rarely on the map but usualyl only found by scouts.
and do i need a "depot" around the ressource or people can get it without a "reserve house" ?

Also, use gathering building to get resources. Place one between 3 resource sites. Don't worry about its cost, it will help you to minimize working force, which really helps a lot.
- workers there work about 2x faster than if they collect directly on pile
- it provide basic heat bonus (that can be further improved by heathers or research) so less chance you people get ill
- it cost resources for build but after dismantle the cost is only 3 wood and 1 steel
I suggest you start by building gathering posts at each group of piles and use it over direct collecting. As it amximise the efficiencey of your people with protection of their health there is little to no reason to do otherwise.
You Usualy need them for food (processed) and coal for your city for the storms. YOu probably don't want your people working i nthe fairly cold collection palces for coal during storms due to risk of illness, especialy i nthe beginning.
But mainly you need hte food storages for larger cities, as your hutners and greenhouses for raw food are flat otu shut down during storms (no options, they just get shut down by the game itself), and your food halls where they turn raw food into processed one shuts down when it's to cold, so oyu need stockpiels to prevent hugner and starving.
Btw remember to dismantle not needed roads too - yous till get some wood back which can be useful particularly early on.
Later gathering posts can be only use if you are going after coal thumper with gathering posts. It is actually not so bad option if you have lot of spare workers and/or do not want use steam core for coal mining . or coal mines are not sufficient (in large demanding city) - but likely coal mine is better choice in most strategies. (most tricky is charcoal as you need burn wood there.. it is more for some specific strategies or maps)
