They could play without you in the world.. but you'd have to be in the world yourself (meaning you'd have to have your computer left on.. with Steam/Don't Starve Together running).
I suppose you could do server file trading of sorts. You could give them your world files.. then they could install them and their PC and play in that world without you. But whatever is done would only be saved to their PC.. and they'd have to save/copy/send those files again (with the progress they've made).. and you could then save/run that world from where they left off.. and continue that back and forth each time you want to play together/alone.
