Why does the crop will attack me when I am harvesting them?

You most likely have a Spiny Bindweed in one of your plots. Bindweeds will protect any plant in nearby farmplots if you attempt to harvest or remove them with a shovel. Just remove them with a shovel and in the future try to remove them before they grow up proper.

The other alternative is that you might got Firenettles in your farms and again you just remove those with a shovel since it's a weed and those are actually damaging to your farming operations.

Best idea is to research all plants you have with a gardeneer hat and find out what's a weed and what isn't and remove the weeds as soon as you see them before they can grow up properly.
