other than that caves and digging up graves MIGHT yield some gears.
you'll easily find them in the ruins, but you'll most likely need to bring some gears to repair them. then again, you'll more than likely get the gears you need from the clockwork knights and bishops that are down there.
In regards to "Having an equally difficult time with the super gastronomy circuit and the chorusbox one," you can get the chorousbox circuit by scanning crab king or pearl, both can be found on the ocean, and the 'hunger circuit', if i'm not mistaken, the worse one is gotten from scanning hounds and the better one can be found by scanning slurpers (can be found in the muddy/lichen biome outside ruins). As far as i know though, if you have caves disabled it is impossible to get the upgraded hunger circuit. Then again i havent played wx in a while and didnt bother to fact check so you may want to test this out in a creative server or something.
Since finding normal rook requires you to either
Get lucky and find the setepieces that have him.
Or destroy the Rook chesspiece during full moon.
You have better odds of going into ruins and either
Find an enemy rook to scan
Or fix one of the damaged clockwork piles and hope it's a Rook you get and since you fixed it, it'll be friendly so you can scan it without taking damage.
