Don't Starve Together

Killing bosses in this game alone is outright impossible.
I've been attempting to kill the queen bee boss for OVER 2 HOURS and every single attempt ends with me dying. I've been fighting her with an ornery beefalo and on every single attempt i would completely burn through 2 pan flutes, 1 ice staff, 1 fire dart and 5 sleep darts and yet it doesn't even look like I've gone through half her health before getting overwhelmed and dying. I'm playing as wilson with the beekeeper helmet as my armor. On the wiki it says her health is 22500. How am i supposed to kill something with that much health? There aren't any weapons in the game even remotely capable of doing enough damage to go through 22500 hp, so what am i actually supposed to do here? Is there something wrong i'm doing or should i just resign myself to never being able to kill any boss stronger than a deerclops or spider queen? hell, even those i can barely kill on my own. I'm genuinely asking for advice because from my point of view killing any bosses solo simply seems impossible.

I believe you're exaggerating a bit.
No boss is impossible to kill in Don't Starve Together (DST). It just takes a while if you're alone. Compared to DS, a lot of bosses HP has been boosted in DST because of multiplayer factor.
It's all about knowing the fight and training for it, which involves a lot of dying...
Have practice fights VS bosses like Bee Queen so you can be more confident and prepared when you decide to fight them under "normal" circumstances.

Try this mod then, It automatically adjusts the HP of bosses based on how many players are playing. Default DST boss encounters recommend 6 players. While DS 1 Player.

Don't make it a hassle or chore to take down these bosses, Unless you just doing it to show off. In which case, Good Luck with that.

best advice i can give you is to change character for the big bad fights. Maxwell is great for beequeen solo if ur a noob (like me!), Wolfgang or Wormwood (special armor) is also a great candidate for beequeen. Heck you can even kill celestial champion at the cost of +- 60 nightmarefuel using Maxwell without helping the duelist, but fuelweawer is a no go so gotta put more brain power on that fight.

I still want to game to retain the level of challenge and difficultly intended for it by the developers but the bosses simply have way too much health for me to ever be able to kill them alone so i'll check it out. Does it only affect bosses or all enemies? also i'm confused as to why the developers didn't design the game like this in the first place. It would've been much more balanced than the current design is.

I like wilson due to all the utility his skills provide but also i'm over 160 days into this world so i'm not gonna completely start over just to change characters.

I don't have any way to change characters currently and i have no idea how to do the florid postern thing that allows you to change characters in the same world.

you don't need start all over. you can change character with moon portal every time when you want.
I don't know how to do that. The florid postern doesn't do anything when i click on it.

or i'll just copy my response from it:
Simply put, you need 1 boards and 1 rope for the Portal Paraphernalia, 24 moon rocks for the portal, moonlens, and idol, and 2 purple gems for the latter two. You also need to either get the Celestial orb or construct the Celestial altar, the former which will drop after some time from a meteor shower, and the latter which you must go to lunar island for. You put the Portal Paraphernalia on the portal, put the lens and moon rocks in it, and give the idol to the portal.

Or you can change to Wonkey (because he is the strongest character for sure) by killing 10 powder monkeys (or by going near where one has died), found either on the Moon Quay island or from pirate raids that can occasionally occur on the ocean.

Edit: after reading the op thoroughly, i have come to the conclusion that you are wasting sleep darts and pan flutes. For bq's first and second phases (first half), pan flutes are not required and are best used for the third and fourth phases (second half), where the bees are hard to outrun. It also seems that you are not using a ham bat, a weapon with infinite durability (until it spoils) intended for bosses with large pools of health. Don't watch Jakeyosaurus though, as his videos are full of misinformation and he's just a bad person in general. Watch the video by Guille for more info

Bosses are designed to be tackle d with friends hence the massive HP.

So for bee queen they're 2 popular way to deal with her.

-first way is relocating all the rabbit houses in cave toward her spawn, gather an army of+30 rabbit and it'll help a lot. You should befriend some rabbit so when you attack bee queen all the rabbit will dive toward her. You need to participate else the rabbit will be distracted by the bees.

-The second way is abusing the pan flute.
Phase 1: use pan flute and kill every bee except leaving 1 alive so queen bee doesn't respawn more.

Phase 2: she spawn more bee and killing bees make her respawn instantly. You abuse the panflute to keep the bees sleeping while you deal with her.

Phase 3 and 4: you do a "dance". Bee queen scream to buff her minions that will rush to attack you.

Wait for bee queen to scream and you lure the boosted bee away from her when it end.

Quickly come back and attack bee queen until the minions reach you and you flee, repeat.

I attacked her using my ornery beefalo, which already does almost the same amount of damage as the ham bat and doesn't have durability as well so using a ham bat wouldn't make my odds any better and also I wouldn't be able to ride my beefalo and use it at the same time so...

The first method you describe simply isn't feasible. To do all of that on my own would take a ridiculously massive amount of time, especially since I haven't even begun exploring the caves map yet. As for the second method, I already did try many of the techniques you describe and I would still end up dying anyways.

To make the idol you craft it at the celestial orb, requiring 1 purple gem and 1 moon rock, and to craft the purple moonlens you need to first craft the empty moonlens at an alchemy engine with 3 moon rocks, drop it on the ground, and socket a purple gem into it.

1) don't be lazy, all bunny villages is close to cave entrances so it isn't that long, and even if you don't have a whole army it'll speed up the fight having the bunnies passively helping you.

2) bring more heal and armor, you can't kite bee queen. Bring TON of healing and beekeeper hats.
Don't do it on beefalo, it isn't suited, the time you get down for healing the beefalo you either get harassed by bees or are too far away the boss despawn.

The bosses are seemingly balanced for one player. They're way too easy as a group.
