While many bosses are built for groups of players there are mods to rebalance it for solo play but otherwise it is pretty much a Don't Starve+ experience if you don't mind losing Shipwrecked or Hamlet content.

Don't Starve: Don't Starve, +Reign of Giants(DLC), +Shipwrecked(DLC), +Hamlet(DLC)
Shipwrecked and Hamlet offer completely unique features and gameplay to experience.
Together: Don't Starve + Reign of Giants + A New Reign + Return of Them + From Beyond(wip).

still, both games have exclusive content from the other so there is a reason to pick one over the other.
the way I see it is even though you can play either game completely solo just fine, DST gives you the chance to play with friends if you happen to find anyone who enjoys DST as well. you won't get that option with DS.
If you buy Don't Starve, you can potentially play Shipwrecked or Hamlet which are pretty cool DLCs.
If you buy Don't Starve Together, you can potentially play multiplayer, with friends or with strangers.
