Without counting the DLCs like Shipwreck or Hamlet which are DS exclusive
DST:
It has its own bosses and stronger version of the DS bosses, such has the Bee Queen or Klaus.
Tons of the resources that arent renewable in DS are in DST
No adventure mode.
You can navigate the ocean with a raft.
A lunar island.
You also have skins for items or the characters.
The characters work different and arguably better than in DS (most of them)
Some mechanics work differently, such has the Farms which were reworked heavily.
Etc.
Personally saying, i think DST has considerably more content than base DS (without counting the DLC worlds), plus so far it seems that DST gets more updates than DS, if anything i think the only thing DS has that DST doesnt is the Adventure mode and DLC worlds and some of the characters (Since Warly and Wornwood got added to DST) but with mods you can sorta add stuff like the characters to DST, like Wagstaff.
Part of the reason is that DST is actually the sequel to DS, since DS ended when Wilson was captured by the Nightmare Throne (the end of Adventure mode) and with DST happening after those events with Charlie usurping the throne and sending Wilson back into the constant, this time surviving with the other characters, with him meeting the revived Maxwell first.
If i had to choose, i would go for DST.
Only difference is preparation it vary depending on the boss and your character.
Characters can be switched ingame via celestial portal. So game is perfectly solo friendly.
Could also add that the seasonal bosses work differently in DST, some more than others.
Deerclops works largely the same.
Bearger wont despawn with the change of seasons and is neutral.
Moose/Goose wont be alone and several of them will spawn, each one leaving an egg.
And Dragonfly becomes a superboss in the dessert thats available to defeat year round.
