You can also cage them as Operatix mentioned. Just build a fence around a small area, add a gate and drop the caught rabbits in there.
Rabbits when killed drop morsels. That's food which can be converted into small jerky or other useful dishes in the crock pot.

As for the captured rabbits after using a trap. They can be used for 3 different crafting recipes: Rabbit Earmuffs, Prestihatitator, and a War Saddle.

When you're going insane Rabbits turn into a black haired version called "Beardlings."

No, Rabbits only spawn from their "rabbit holes." They do not duplicate through reproduction in this game like the beefalo do.
The rabbits respawn every 2.5 days in game after you kill it.

"In Don't Starve Together, digging up and destroying a Rabbit Hole will cause the game to internally trigger a Regrowth Event, which allows for the Rabbit Hole to regenerate itself after 5 days. This effectively makes Rabbit Holes renewable. However, this only applies during Summer and only one Rabbit Hole will be regenerated at a time, while the others will remain queued. In other words, if 4 Rabbit Holes were to be dug up simultaneously, it would take 20 days of Summer to regenerate them all."
They don't multiply but this method allowed me to have a backup food source without the rabbits despawning or dying of starvation.
