Place the campfire and make sure it's as hot as it's gonna get, equip your hambat and football helmets, and just tank him while attacking him next to the campfire. Should prevent you from going insane since he'll usually be dead before insanity becomes a problem this way.
Best done with high hp and away from flammable items since the campfire will burn them down.
EDIT: Sorry I didn't assume you were new
To fight him, just let him hit, go in hit 2-3 times (depends on netcode) and kite, repeat this a few times and you if both of you've hambats it will die pretty fast he has only 4,000 hp, Practicing the kiting on the test server, you can spawn him with the c_spawn("deerclops") command. If you don't have a walking cane for the movement speed to kite, try to take him to a path for increased movement.
Here's a video on how it should be done:

Deerclops part at 3:11
Wish you the best of luck!
I have an easier way so that you can deal with it:
First you can choose a spot for your base near (Not so much) swamp or forest. Or anywhere with a lot of mobs. Once you've set up you can also manage your base to be less affected by deerclops if by any chance you realize him very late. (Place building at a distance from each other.)
Then when it arrives, your friends should provide food and light (Just in case you run out of those.) and you, should lure him to the swamp. When in the swamp, remember not to get killed yourself! Always stay at safe places (Mostly corners) that are tentacle free. And never chat while you are in there. Then lure the giant at tentacles until they kill it, or just leave it there, go back recover and come back later to find it and finish it.
At the end when you saw a lot of tentacles or mobs hit him, you can all simply put log suits and attack him with spears, if you are not good in kiting, just tank him at the same time. (Make sure he has low hp. Otherwise just ignore him.)
After you've passed the first winter, then you can start upgrading your gear and base to easily kill other bosses by yourself.
I hope it helps. :)
That's a pretty advanced combination for +600hours players. Suggesting a beginner player to play as Wes and even tank the Deerclops as Wes will only bring more frustration and starting over for them.
-A Marble Suit (12 marble 4 rope)
-2 Football Helmets (1 rope 1 pig skin each)
-Fresh Ham Bat (1 pig skin 2 meat 4 sticks, craft it right before deerclops for most damage)
-Campfire
-A Sign (To lure Deerclops)
How to do the thing:
-Go far away from your base during the dusk of day 30.
-Plop down a campfire and fuel it up to max.
-Place down a sign near (not too close to) the fire. This will lure deerclops because it's a structure.
-When deerclops spawns, get his aggro and then move right next to the campfire)
-hold ctrl f until it dies.
You can get off relatively scott free using this method. You'll only lose about 30-60-ish HP and you won't have to worry about insanity, granted your HP and sanity are full before the fight.
While yes, Kiting is more resource friendly, it is a surefire way to go insane, and nightmare creatures + deerclops is very lethal.
This method can also be used if you replace a marble suit with a log suit, but you'll be much more injured.
Example: I was able to tank as Willow, someone who has no special combat-related perks. (This post was made pre-rework if people are looking back on this thread from the future.)
The Marble suit is honestly very under-used, it blocks 95% of damage, and along with a football helmet, you won't need to worry much about dying. Keep in mind that Deerclops breaks about 60-70% of a marble suit when you perform optimally, so you'll be able to use whats left of the marble suit in the next hound attack or something.
You should change the force attack and attack to another button (Single button) from settings. Ctrl+F is the default attack which is useless.
I recommend putting both attack and force attack to 'F' button.
If OP don’t know how to kite, he can use this method.
Yup those are strong items and food.
