What I experienced, people (I know and played with) choose their characters much after their own characteristics. I personally play very reckless and often act as my peoples "bodyguard" or one-man-resure-mission. Therefore I enjoy playing as Wigfried very much/feel she reflects the role I see myself having in my group best. I also enjoy playing as Wilson for his sarcasm and gallows humour (rather when playing alone because of the way I can relate to him makes him kind of a teammate).
Wendy is a character I saw many rather shy people play with because Abigail makes it easier to stay out of focus bacause they are in theory not the only one present which seems to take away much of the stress.
For Wolfgang it's often the funny/clownish people who play him because of his comments and animations. I did not experience them to be more agro then others, maybe more protective.
Wickerbottom (which I find VERY interesting) I saw was played by people who take a very strategic approach to games generally and want to play as efficient as possible.
WX I only had one friend of mine playing as, who is much into science, has a dark humour and a very very tiny feel of superiority. He found WX's comments extremely funny and fitting for himself.
Winona is much of a "team-mummy". She's played by those people who feel more comfortable with careing for the others (keeping the camp running, cooking ect)
Willow, well...all poeple I know who played her (only guys surprisingly) have a soft spot for rather crazy girls or darker topics (like playing Cthulhu pen&paper, being goth f.ex.). I did not experience them as "cruel" but Willow certainly triggered their agressive site.
I haven't seen the others much in action, sry.
I did not experience that people who are new to the game did choose a character in specific (except starting single player as Wilson in the beginning). Most stayed with their first character or are switching between two depending on the team or if they play alone.
Huge fluctuation, can either be really good or really bad. Roles vary a lot.
Willow:
Mostly either a noob or a greifer. Either way, it's bad.
Wolfgang:
Can either be a noob or the hunter of the group, meaning the person who takes the most powerful weapon at base, then goes out and kills some big animal (Tall bird, koalafant etc)
Wendy:
Usually played by people who are shy in real life, but social in game. They are usually nice and will help out in various tasks.
Wx:
Either a noob, someone planning to team up with Wicker or someone who eats all gears then leaves when they get bored 15 minutes later.
Wicker:
Tryhard who will scream at you for the slightest mistake. Despises noobs and will scold them if asked where the base is located.
Woodie:
Mostly noobs due to his easy ability to gather wood. Generally not considered that useful, and therefore good players don't really play him.
Wes:
Intellectuals.
Maxwell:
Mostly played by people who want to try something different, not many "mains" from my experience.
Wig:
Same as Wolfgang, except more common in pvp servers, where they will often be noobs thinking "The combat character must be the best character in pvp!"
Webber:
Femboys and noobs, thats all.
Winona:
Either a noob looking for something similar to Wilson, or a returning player who played when she wasn't around.
Willow : Will put something on fire. Griefer or useless.
Wolfgang. Minmaxing idiots who've seen one too many youtuber video and think they can do the same. More often than not actually fail. Hard.
Wendy : Knows the game, often just want to chill.
WX : Mixed bag. May have picked the robot because he looks cool, then get a hard life lesson that include dying horribly since his starting stats are weak. May be pros hell bent on farming the ruins. And might be complete arseface who end up "accidentally" griefing and eating the easier to acquire surface gear when it could have been used for a team fridge.
Wickerbottom : Another minmax, but actually a smarter one than Wolfgang. Always has a good grasp on the game. Might be fun to play with.
Woodie : Wants something new. Doesn't care about much. Might get too enthusiastic on ressource gathering.
Wes : Wants to show of his "skills". Often end up a drain on team ressources and sanity (In game and in real life too). If you're that good, go solo misery toadstool please.
Maxwell : Good enough to start acting lazy. Until they get too lazy and end up dying because they forgot to "wake up"
Wigfried : three possibilities :
Either the good guy who will go and take on every ennemy after equipping allies to get sure meat stocks remain high.
Either a complete tool who will die because he/she never played and don't know how fast equipment end up breaking.
Or a ♥♥♥♥♥♥♥ ♥♥♥♥♥♥♥ that will ask to be fed in exchange for equipment. The last one will also keep plundering the fridge.
Webber : Loner at best, griefer at worst. Will want the world to fit him, rather than try to fit the world. If those spider nests "somehow" end up at portal or on a wormhole, this fire staff will have a discussion with your base and your babies.
Winona : Mixed bag. Only seen three times. The first two were pretty chills, the third was an obvious idiot trying to act like a parody of an hollywood feminist. And it was just sad.
Other than that, he's a pretty chill guy, being the kind of player that really doesn't give any reason to hate him
He also seems to be a quite common choice for some very experienced/pro players
Willow: Often seen as either a noob or a griefer. Not that i dislike her at all or anything, i actually find her a pretty interesting character(though more in single DS than in DST), but that's what playing on public servers really shows most of the time
It isn't always the case though, i have a friend who has been playing for a long time and is pretty good at the game, and she's a main Willow
Wolfgang: This is probably the character i have the most stereotyped opinion about, but that's mainly because of a few youtubers/pros i see having him as main *cof* Edgy Rick *cof*
I see Wolfgang players as usually being very experienced players, but most easily the kind of player who would be arrogant to less experienced ones
Often, Wolfgangs are one of the first players to rush Ruins, and do other more advanced game stuff
They are also a kind who likes to fight, though not the one i see most commonly joining a server just to fight (that goes to Wigfrids)
Wendy: This is usually a shy player, it's the kind of player who usually plays quite cooperatively with the others, but not particularly the most sociable (and also not the kind of player who complains about others, i've actually never seen a Wendy do this)
Of course, they use Abigail a lot, and as such are most commonly seen hunting spiders and killing bees
I've seen some quite experienced Wendy players out there, but doesn't seen to be a common pick among pros. I also don't really see noobs picking her at all
WX-78: My main! So i think i can talk a bit about my own reason to pick him.
I actually never thought of using him because he's a top tier character (and in fact i didn't even know that when i choose him as my main), i just really like not having penalties for spoiled food! (especially since, when alone, i either have way less or way more food than i need. So i'm either close to starving all the time, or having a lot of food spoiling, so i think he's a good pick to deal with the second case)
Also, WX has a lot of other benefits i discovered while playing him, and his only downside is pretty minor, so it led to me liking him even more! (not to mention the humorous evil comments)
As for other players, i sometimes see some quite experienced players using him, being, along with Wolfgangs, the first players i see rushing the Ruins.
There are also the WX players who are just waiting to "accidentaly" eat all of our hard earned gears, so he's not always a good character. But generally, he's a kind of guy that doesn't bring problems to the others, and i very rarely see noobs playing him.
Wickerbottom: Wickerbottom players, i actually often see them as Wickerbottom herself xD
Often very experienced players, who play very strategically, paying attention to many details to always achieve maximum efficiency. They're usually the kind of player who can easily lead the team, and can keep the server running by themselves.
Also, i see way less arrogant Wickerbottom players than i thought i would (in fact, i've seen more arrogant WX players than Wickerbottom ones), so she's usually not the kind of player to hate
There is also a rare type of griefer who plays Wickerbottom, the one who spams "On Tentacles" on any important spot (usually the Florid Postern or the base)
Woodie: I don't really know much of what to think about Woodie players, i guess Woodie is just the character who has a more varied kind of player. I've seen experienced Woodies, noob Woodies, average Woodies...
They're usually the type of player who wants to gather a lot of resources, especially wood (duh), but i don't really see a specific role these guys commonly go for
Wes: Being literally intended to be the worst character in the game, that totally isn't really what i see with Wes players!
99% of the time i see a Wes in a public server, it's a really experienced player/pro! He's usually the kind of player who goes for more advanced stuff to do, and also the guy who has the easiest time staying alive.
Also, i often see these guys basing alone, instead of staying with the rest of us (And they're ALWAYS the last one staying alive, in their solo base, while everyone else dies)
I actually very very rarely see a troll or a noob playing Wes, so he's usually a player i can put a lot of trust into when i see one in a public server
Maxwell: Maxwell is actually my main when it comes to public servers! Mostly due to the fact that i lag on pretty much any server i'm not host, which really affects fighting!
So i pick Maxwell both because his low hp means i'll usually not be doing the fighting, and his sanity regen means i'm safe from Shadow Creatures (fighting those with lag is a pain)
When i play Maxwell, i usually concentrate a lot on resource gathering, as well as base building/maintenance and this stuff
As for other Maxwell players, i don't see much of a difference from my playstyle, being the guys who go resource gathering (usually being followed by their shadows all the time), and doing base stuff, but they also seem to sometimes go fighting as well (since they probably have a better connection than me)
I very rarely see noob Maxwell players, but also just as rare to see a pro using him, Maxwell players are mostly average to experienced players.
Wigfrid: Ah, Wigfrid, the fighting guys!
These guys are all for fighting, they're usually the ones to go hunting all kinds of mobs to get food/resources. They're also the usual "Deerclops is coming, let's kill it" guy.
Pretty often, these guys will be crafting their spear/helmet for others to use, and will equip the other players to take them in the boss killing spree.
Wigfrid players are the kind that range from noob to experienced. There are the noob ones, who usually go asking around for meat so they don't starve to death, or try to tank a big group of mobs and die in the process. There also the more average players, who can fight and get food for themselves, but not quite good at the game. And there are the experiences ones, who can safely solo a seasonal giant and get to some more advanced stuff (such as Ruins). It's very rare to see a pro playing Wigfrid.
Webber: There seems to be quite a lot of hate for these guys around the community, though that's not really the case in my opinion.
I see Webber players are usually the guys who like to play differently, eating monster meat, recruiting spiders to fight and all that stuff that only him can do. The more experienced ones can get a spider farm up and get quite some good supplies for the team.
I have a friend who's main Webber, and i see his reason, most like many other Webber mains, to be "I like this guy". As simple as that, just the guy who wants to have some fun...
There is the problem with him being a monster, as he'll usually have to stay away from the base, since in 99% of public server it's always "LET'S FIND PK!!!1 BASE AT PK!!1".
But it's not really his fault, PK is a pretty bad base location in my opinion anyways, there are way better/more convenient/more useful places to base, and i don't really understand this obsession going on with basing at PK on public servers.
Webber players, just as Wigfrid ones, range from the noob to the experienced. I also don't really see Webber griefers like people always talk about. there are however the ones who don't know the minimal distance the spider farm should be away from base.
Winona: This is a character i don't really see much in public servers, so it's hard to have an opinion on her. I guess by her abilities we'd usually be looking at a Wilson-like character (though not as good as Wilson himself in my opinion), and the kind of person who would focus on base building.
Also, pretty often i see these guys like to keep a few Trusty Tapes always ready if needed.

2nd mostly played character by newcomers

Wulfgang:
Edgy Rick-wannabe
or just someone likes this brainless strongman
Wendy and her dead sister: absolutely played by everyone
WX: rushing ruins for nothing or just gears eater.
Wickerbottom:
experienced in this game to use books for exploits
or too lazy to develop a backpack
Woodie: replacement for Maxwell
Wes da Bes: "op character which is needs a nerf"
Waxiswell:
2nd character for experienced players
or someone is just too lazy to chop some trees by themself
Wig: good tank or starving warrior actress
Weeber:
3rd character for experienced players
OR
3rd character which is mostly played by newcomers (or kiddos)
WINona:
Base builder and engineer at all
or someone is just no clue who is that and want to play as her for the first time
Yea, that's the thing about stereotypes, they don't always reflect the truth, but if it's so common of an opinion, it means there are people who play like that (like how i don't like the Willow and Webber stereotype, but the fact is i've seen many Willows end up being trolls or griefers...)
I'm a main WX too, and whenever i'm playing with other people, i'll never be a priority for gears consumption, i always leave them for the team, in case we need them
But the fact is, that type of WX exists, and i've encountered a few on public servers, searching our chests for gears, asking for them every 5 seconds in chat, or just taking some easily acquirable gears around the surface before everyone else (these guys usually aren't the type who would put enough effort to actually fight clockworks for gears though)
That's why i usually keep all the gears in my own inventory, or ask others to do so (i don't play WX often on public servers, i use Maxwell)
There was even a server where i was playing Maxwell, and a WX was asking for gears all the time, saying he "just wanted to eat 1" (we had 4), so i took all the gears from our chest and kept them in my inventory (i warned the others so they wouldn't worry about it), then that WX followed me at all times, just waiting for me to die, and when i finally died, he rushed to my dropped stuff, got all the gears and "accidentally" ate them all! Then he left the server 2 minutes later...
