There's DST, and there's DS.
DST is the multiplayer version with a DLC called RoG which you get for free. DST also has another free DLC called " a new reign which has added a bunch of DST excluded stuff that DS doesn't have.
DS is the singleplayer version where RoG is NOT free, however, has 2 other DLC called Shipwrecked and (unfinished DLC that is in Early access) Hamlet. These 2 DLC's. Not to mention adventure mode. All these 3 things (hamlet, shipwrecked and adventure mode is only in the DS singleplayer version.
It depends on what you want. DS is a whole different experience compared to DST with all the 3 DLC's it has that can change the normal game completely like Hamlet and Shipwrecked.
While DST has seasoned events and its own events like the forge (that is enabled rn), the excluded DST content and of course, multiplayer.
At the beginning Klei didn't play to make a multiplayer version of DS and they designed to be a singleplayer game. As a result, they had to rebuild the game from the ground up basically. There were many things that simply didn't work in multiplayer and so had to be changed. The core changes are not always that visible or trivial, but there are many and the code of the both games are different.
Not to mention that DS has a much more true survival feeling where you're on your own in a hostile world, while DST is more relaxed, social and also more forgiving.
DS is ONLY singleplayer, NO multiplayer
You can play DST alone, in a private world. However, many enemies (especially bosses) have their health drastically increased for multiplayer. There are mods that reduce the health back to DS default.
DST has the Reign of Giants DLC prebuilt into the base game, whereas it has to be bought for DS. (The DLC adds 2 seasons (with seasonal bosses), 2 playable characters, a wetness mechanic, new crafting recipies, and new biomes.)
DST has seasonal events, limited run events (The Forge and The Gorge so far), cosmetics, 1 new character (exclusive to DST), a slew of new bosses, new late-game crafting recipies, as well as reworks to a lot of DS mechanics. Most of these changes are to make the game work better multiplayer. e.g. rocks become an infinite resource in DST due to meteor showers.
DS has two paid DLC's now, Shipwrecked and Hamlet, that radically change the game. Shipwrecked adds 4 DS exclusive characters, Hamlet adds 2. These DLCs make the game feel like a different game altogether, as they give a whole new world type to the game.
DS has a "story mode." It's just a series of worlds to survive through, totally optional, but gives you something to strive for.
DS has each character have to be unlocked. In DST all characters are available from the start.
TLDR: Each game has exclusive content, despite sharing the base gameplay. There isn't a "definitive" edition of the game. DS has a lot of DLC for purchase, but give you a steady stream of unlockable content, and has the option to be expanded with DLC. DST has all content available from the get go, and lets you play with friends.
I'd say if you aren't interested in buying any DLC, or don't want to invest a lot of time into the game, go for DST (but do download a mod to reduce enemy health if you play alone).
reign of the giants is paid too ;D (3 paid DLC, but one is avaible for both games)
Also people are making mods for DST that give you those DLCs for free, just like mods that add the forge and the gorge you can play anytime.
I have heard there were plans for mod that adds story mode, no idea if it started or they abandomed it.
Get both.
There really isn’t a comparison to be made it’s like comparing 2 games in a series. Well they have some of the same content (the base 4 seasons 5 bosses and basic crafting/structures) they are wildly different as dst has 5 exclusive bosses 1 exclusive character, events, multiplayer and a lot of exclusive crafting and structures. Where as ds has 7(8 soon) exclusive seasons 2 exclusive worlds 5 exclusive characters 5 exclusive bosses and more exclusive crafting and buildings than I can name.
toadstool + it's raid variant
3 variants of reanimated skeleton (one is endgame boss)

unless you have some specific way of counting for bosses ;d
