Wickerbottom is the most OP character an Woodie is the 2nd IMO.
It may be difficult for a new player tho, so you can also try Wilson as a start.
Yes she is a lot worse against bosses than other characters but she introduces people nicely and slowly into sanity management, farming, being efficient with your time (ghost damage bonuses) and learning when to run from fights. I learned the game with her.
Good starting characters should help you learn the game mechanics without having easy to trigger fail states that you can't really do anything against without knowing about them.
That's a nice point; and actually one of the best reasons why Wilson should stay as is, without any new mechanisms or major up/down-sides.
It will help new players to learn to survive without relaying on a specific character's perks.
