Well, the eyeball is really worth it, sometimes i find myself killing him the next winter just to get those 8 meats he drops. He's really easy once you learn to kite, just craft a hambat, wear some armor and kite him by hitting him 2-3 times then just running away from him. Some characters even have an easier time killing him (namely, Wigfrid/Wolfgang because of their damage bonus+tankiness, Wortox because he's less afraid of monsters (has a sanity drain of only 50% when near them) and because his soul hop ability can be used to kite him by teleporting in front of him right before he's about to hit in order to avoid the damage because of the invincibility frame, and Woodie because of his weremoose form, all you need is to have full health, place a campfire under your feet, go moose and just facetank him, he'll leave you with around 50 health which can be easily restored back to full with 5 healing salves (make sure you have some food on you as well because your hunger drops to 0 when going back to Woodie)
All in all, Deerclops is the easiest boss of the bunch and a easy kill once you know what you have to do, the eyebrella is really worth it because it provides full water resistance, lightning immunity and 240 seconds of summer insulation, that means you can walk around without a cold thermal stone for around 4 minutes before starting to overheat during summer ;)

Burning pig houses is a total waste as the pig skins a pig can drop are very useful for crafting recipes, just hammer their houses and build them in a location that is better for you, or you can leave their houses untouched and simply put a bait near the glommer statue (build a square cage by using any kind of fences/walls you want and put a food item/pig skin inside of it, the werepigs will mindlessly run against that wall trying to get the food completely ignoring everything around them, this makes it easy to kill them as well for their drops.
Glom glom has no actual uses though, glommer provides sanity when staying close to him and his goop can be used for healing, nightmare fuel farming, fuel and as a fertilizer
