That is, if I kill the winter boss and the next winter arrives, will it reappear?
The circle made of branches is its nesting site and those appear commonly around the world. More than one moose/goose may spawn per spring but only one can spawn per nesting site.
Only the Deerclops and Bearger wander the world and spawn at the player's location. The deerclops spawns on day 30 of winter and the bearger spawns around the start of the 2nd autumn and they can spawn repeatedly in their respective seasons.
No bosses are necessary though their drops do help tremendously and aren't to hard to handle as long as you know the strategies. I recommend looking up some guides for more information and kiting methods to deal with them, as well as other uses they have.

and yes you can avoid the bosses:
deerclops will most likely go to your base but if you are far when he comes(day 30/31) he will first aggro on you then just wander around and will disappear in spring
bosses like dragonfly,bee queen and ancient fuelweaver are spawned by you so...
but spider queen is very hard to lose aggro(still posiible)
