I just stay near some beefalo and kill one or two once in a while. I also keep some berrys and birch nuts ffrom autumn and use them as fillers to make meatballs. I use a thermal stone to keep warm. (these are just the basics, I do much more then just this in winter)
-Kill some beefalo until you get one of their horns then shave more until you can prototype a beefalo hat from the alch machine.
-Make yourself a thermal stone with a pickaxe and a bunch of rocks and flint. The stone only loses durability when it reaches it's normal state so heating it back up before it drops below the green stage then it won't lose durability.
-Play wilson/webber for some good beards.
-Always have a campfire precrafted.

You literally just have to gather wood, and food. Spring has excessive rain, which freezes you and makes you insane, and to prevent it you need expensive clothing, and summer destroys entire bases and forests if they are not guarded by yet again, expensive flingomatics. If you find winter hard, you really do suck at this game.

You can just put a campfire next to you and you wont freeze

spring and autumn are easy. Winter and summer are harder. I would say that summer is the hardest but winter still isnt easy. Your clothing problom is solved with a eyebrala or a raincoat. Both of which have a 100% water resistence and they arnt even that expensive.

Tanking deerclops is still a really bad decision, giving how kiting him is literally just hitting him once then going in a straight line backwards for 2 seconds and repeating that cycle. If you actually feel you would rather waste armour and health over time, then go ahead, but its usually better to end up with no damage after a fight than having some.

Tanking is actually really effective if you have armor and a ham bat. Kiting him solo takes forever and you'll go insane before finishing the fight. Kiting him with a shadow creature or two nearby is needlessly difficult. Just use logsuit, helmet and ham bat (materials for hambat can be obtained from a werepig) and tank next to a campfire to get it over with fast and avoid sanity drain.

All you need for warmth is a thermal stone (very overpowered in dst tbh), torch, and maybe some logs if you want to start a campfire or set one down and light it for quick heat. Clothing is not necessary unless you intend to do a LOT of scouting. Stock up on grass and twigs (~1.5-2 stacks each just to be safe), as they don't grow in winter.

Food and fuel is where most players struggle. Before winter, either find beefalo or set up pig houses and spider dens for renewable meat. This is the best food source during winter. Make drying racks for large meats, and use the sanity from the jerky to help with the long nights. For fuel, use beefalo wool if you live in the Savannah​, or use logs if you have to. Keep a supply of extra logs in a chest. Pigs can help you gather logs if you're short for time.

Setting up pig houses and spider dens near your camp will also provide you with materials helpful for fighting deerclops. Pig skin for helmets and ham shanks, and spider glands for healing salve.

also ice can be used as a filler in the crockpot for meatballs

You're gonna get insane doin' that. I'd rather just tank him. Losing some pigskin/grass (or a few rocks if you're Wigfrid) isn't that critical.

Also bring some Pierogis. They heal for a good amount.
