Gold Temple, InsanitY, HeLL - All really good ones by serponge. They have a simpler look which I really like, lots of solid colour and the gameplay is fun.

Gradient - A really colourful, glowy, fun level but quite a challenge as there's some quick timings

Memory Reboot - By far the easiest medium demon I've played

Toxic Surge - A really fun 2.2 demon that makes use of a lot of the new stuff.

B, Deadlocked, or Speed of Light II

PlundeR and Boxing Boxes are two very fun medium demons that are on the easier side.
They are good for getting into medium demons.
