Lag, stuttering, and inconsistent frames on M1 mac

I have some footage as well. Everything is sequential, and in the same session. I just cut some menu navigation and failed attempts. How do I fix this? Also, there's more than shown on the footage. I couldn't capture it, but It will:

Slow down the game

suddenly get perfect

same game speed, 9 - 11 FPS

Slowed slightly, and choppy.

All of this happens no matter the level. This is an M1 macbook air, 8 gb of RAM.
Also, with confidence, I can say the screen capper (quiktime player) had no effect on the footage. There were no big background processes either.

i had the same problem. its a setting so its going to be laggy but not inconstant. it helped me a lot. i forgot what the setting was called.
