Out of the three characters, Arthur is the only character that can use both the workbench and chemistry table and has the most balanced build for both combat and stealth, being able to craft a relatively wide assortment of survival items, tools and weapons, as well as being able to wield any weapon he can find. However, he is unable to craft the 'ultimate' recipes for either the workbench or the chemistry table, since he is no expert, just skilled. Arthur can also deal much easier with penalties incurred from being hungry, thirsty, tired or sick.
While Sally on the other hand is restricted to stealth build as her skill tree is replaced with a survival skill tree. That leaves her vulnerable during combat. Her main trait is her expertise in both chemistry and herbalism, which allows her to be able to create various drugs and chemicals as well as various psychedelic and other useful toxins. After of course we unlock all the recipes. When it comes to the workbench however, her skill-set is very limited and is not able to wield all weapons and has more trouble with dealing with all the penalties in the game, including motherhood. Though she does have quite a few boons to make up for it.
Ollie is however restricted to combat and survival only and his strength makes up for being unable to use stealth as he doesn't have a stealth skill tree. Ollie is also a decent improviser and a good craftsman, as he has access to a much wider array of crafting recipes for survival items, tools, and weapons, at the expense of having far less chemical crafting knowledge than Arthur. Out of the three characters, Ollie has to deal with more negative effects than positive ones and his handicaps make his character the most difficult to play out of the three of them.
I think by that point I had lockpicks already (I'm an obsessive looter).
Both of those can also be grabbed just by running in when people's backs are turned, and if you fail Sally can outrun her attackers.
Half the time a good strategey is to throw a bottle on the wall outside the building, the person will run out and turn the corner giving you plenty of time to run in unbothered.
And yes, baby timer is annoying. The store owner will give you an automatic baby feeder later... prioritize bartaring skills to get cheaper deals and spend a night looting tons of herbs to craft healing items/sell and you'll be set for the most part.
