"Line" makes all of the islands line up with one another and each island will have a bridge leading to it and another bridge leading to the next, forming a continuous line, hence the name. (Island A links to Island B which links to Island C which links to Island D and so on) You will (usually) start on the "first" island in the line and the boathouse will be located on the "last" one in the line.
"Tree" on the other hand makes the layout less linear. The islands will be clustered together in a group and each island can have bridges leading to multiple other islands. (Island A links to Island B which links to 1-3 other islands who themselves link to multiple islands and so on) Your starting location and the location of the boathouse will be more randomly placed relative to one another.
Note the amount of islands generated will not change. They will always number around 5-7 or so.
