I think the safest way to get it is to get the "Bee Gun", collect the bees using it and then get the honey. ( Btw the honey bridge isn't in the game anymore at least from what I've experienced)
Anything else?

I tried kiting a npc towards the hive and got them attacked by the bees while I collected the honey. That worked like a charm
Making a padded suit one should be one of the first things to do. Then, all you have to do is collect the honey. The harm will be minimal, and even that will stop when you get far enough away from them.
Or, just use the cheat codes to "give honey" a bunch of times in a row. There's one for the empty syringe too, but I forget the exact spelling/format for it that I used. The syringes are easy to find without cheating, but I used the code for some of those too this time around, since I'm playing Ollie for the third time and I wanted the first part to be easier without dying a bunch of times getting honey, and to avoid frantically trying to get myself a padded suit in a rush, and also to avoid having to make the rounds to all the trees over and over for honey.
While waiting for the padded suit recipe and/or materials, if you don't cheat, eat starchy and sweet foods like bread, potatoes, grapefruit juice, and berries (blue currant ones - try and save the yellow rowan berries for making the strong type of healing balm if possible) to make your blood sugar increase, and to stretch out your use of glucose syringes. Careful not too much starchy/sweet food though, or your sugar will go too high. Eating a whole pie will probably kill you (sell them), although I haven't tried eating just a slice. It might be safe if you're low on sugar, or even a good replacement for a glucose shot. I don't know.
Rob some houses to get both food and supplies, esp the inhabited, ruined ones as opposed to the abandoned ones on the map. Some of the houses in the Garden District have additional work benches in them with additional recipes. I can't remember if the padded suit recipe came from there or one of the 3 garden district safe houses that Ollie has.
Once you have the padded suit, find all the bee trees by walking around all the outer island perimeters and all the streets (while collecting plants and garbage and robbing houses at the same time), or save a screen cap of the map before you get your first honey, since it has them all marked. Then, you can strategically sleep and make the rounds once a day to each tree, collecting enough honey after about half a dozen rounds to last you the rest of the game.
An easy way to get honey before having a padded suit, is to go to a tree that's near some people walking around. Go up close enough to annoy the bees and immediately go run closely past a few other people. The bees will stick to them usually after the first or second person you run closely past, and they'll start chasing them instead of you. At that point, you can usually go back to the tree which will temporarily have no bees there protecting their honey. Harvest it while everyone else is running and screaming "don't kill me!"
Also, a lot food can delay needing glucose shots. About 40 blue currants equals one syringe, and the same with about 3 rotten potatoes (get your eat rotten food skill as early as possible to prevent food poisoning). A slice of pie is almost equal to one glucose shot. Don't eat an entire pie though, or your sugar will go too high and you'll get sick.
