I think u only need to worry about health & sleep though? I only played on hard so not really sure.
What Justin said though I don't even think sleep goes down. You only have to worry about health and you take less damage.

"Birdwatcher" mode is: no eating, no drinking, no sleeping. Just like older adventure games.

Birdwatchers isn't a difficulty.
It is a playstyle, designed for players who want to play through the story without having to fuss with survival.

Everything is exactly the same except you don't have to eat or drink or sleep.

So the AI will be the same.

Are the enemies weaker when you play in Birdwatcher mode?

Yes, they're weaker and easier to defeat. :)
Actually I would love to have some STRONG enemies, but without the survival aspect >.<

A customized difficulty, in other words. I also proposed something like this after the Maidenholm Update, but no response from the devs was given.
Also, I dunno how technically you can allow that as a developer to make it happen and the side effects/bugs that then appear.
I wouldn't mind bossy enemies, reason for which I play on Vigilante, but I also think the survival aspects are kinda annoying in that case.
In the worst of cases you can play Vigilante, but use the cheat to be invincible and, consequently, not having to eat, drink and sleep.

I think they said that it would just be too difficult to implement?

If it's still on the table maybe add a custom playstyle mode where you choose with sliders how fast certain vitals degrade while also choosing how endurable you and enemies are.
