If you want to change the keys for keyboard, use Applocale and open Notepad.exe (with Japanese, of course). Then, open Gd.lst which is in the main folder of the game, for some simple text-editing.
You'll see the line that starts with [KEYBOARDCONF0], which are the keys for player one and the one that starts with [KEYBOARDCONF1], which are the keys for player two.
- the first 4 keys are - left, up, right, down;
- the next 4 are - (not sure about the order, though) upleft, upright, downleft, downright;
- the next 6 keys are weak kick, strong kick, first parry, weak punch, strong punch, second parry;
- the next 3 should be marked with *, since they have no function, and the last key is for start (pause).
NOTE: numpad and directional keys (i.e. arrows) should start with VK_, and the keys you don't want to use with *.
Also, lowercase letters are not acknowledged in the config - uppercase only for all key bindings.
I've managed to get my second player stick to work great, but none of hte buttons register for my first player:

I still hope they add an in-game way that is better so people don't have to dig into the config file.
Neither VK_SPACE nor 0x20 works for me!

And thanks especially to those who've posted their findings on how to rebind. Have been learning kb for the last couple of weeks (acquiring a stick is not an option for me atm) and I have to say it hasn't been too exciting for me. Using the rebinding tech, though, has significantly improved what semblance of execution I may have had on kb (instead of 20% I'm probably 40% now lol). This has definitely eased the pain for me a bit. Thank you again and I hope this thread gets pinned/stickied at some point.
