though complete versions with all the levels would be cool.
It would be rough to import the N64 levels into an emulated PS1 version, since you'd basically be recreating them entirely.
The re release of Soul reaver and Soul Reaver two had a special menu that showed off the cut content of the original game, letting you explore unused set pieces and even trigger partially finished cutscenes that were take out.
What they could do is have a menu list of the Special levels for you to play. While you could have multiple versions of the game on system.. you could also have a smaller game that just has the alternate and Extra levels for you to experience.
