as for tips how painful normal summoning is (and therefore how necessary the quick summon upgrade is) depends on what specific character you are playing. people like Wei Yan or Zhang He tend to be very mobile during multiple charge attack animations and can weave out of attacks easier than someone who moves less during charge attacks.
while I haven't played nearly all 100 characters yet to tell you everyone who is easy what I can tell you is that if you notice a summon combo takes too long to use just use a quicker charge attack (or dodge if you can't) and forgo that summon unless you are sure you are safe. if you are standing in purple on attack 2 and you want to summon character 4 for example dodge first and summon after if you can. if you time it right dodging doesn't actually break your normal attack combo so you can swing twice, dodge, swing 2 more times, and summon character 4 for example.
last thing I'll mention is that you shouldn't worry about it too much if you can't kill the bosses yet. my first run that got past boss 1 died on boss 4 mostly because I hit my level cap and needed to unlock more characters to increase it. like most roguelites the difficulty curve eases substantially as you engage with the game's meta progression systems. also silver lining if you are the kind who likes doing 100% achieves is that failing 30 runs is an achievement.
If you didn't have to use these combos and wait for the best timing to use them, this game would be the dumbest thing ever and I'm not sure that much people would have liked it.
You can even build stratgically around this. For me it's a pretty good feature/limitation.
