does anyone know how to change what field you use when the Home team?

Are you talking about in a pick-up game or season mode?

In season mode, they don't allow you to pick a field. It's exclusive to Parks Department Field No. 2. However, they do allow you to pick your own home field (with PDF2 being one of the choices) in Backyard Baseball 2001.
