It's a pretty extreme bug, really bad. All you can do is fire and hire someone else... and just wait for it to happen again with another employee. I've had it happen twice so far.
I think these bugs happen after a certain amount of play time in a session. I only noticed them happening after long play sessions (and once it starts, saving/restarting is not a guaranteed fix - you have to fire/re-hire for guarantee). Also noticed some lagging/CPU issues after a long play session.
I have been doing shorter sessions, saving/restarting every hour, and I haven't had these issues for a while.
I note the hyptohesis of the game session being too long, I'd think of relaunching the game to make them shorter.
In any case thank you for your feedback
"I'm playing the #6 update (April 4) and the bug is still there.
I had one employee (Eric) in the docks warehouse showing the behavior, walking up to my storage and just deleting everything, then going back to his idle spot.
I looked through the save files:
C:\Users\<username>\AppData\LocalLow\TVGS\Schedule I\Saves\...\Properties\Docks Warehouse\Employees\Eric Wilson
Eric's Inventory.json showed that his inventory was completely full of batteries, which I suppose leads to the items disappearing when he tries placing them in his inventory.
I deleted his Inventory.json file and he now seems to be working correctly. I'm still testing though."
Edit: I'm pretty sure you have to reload your game after deleting the file.
I'll try that the next time he steals my products, thanks for the tip!
