Wish we could shoot them for it
There is a bug that causes that. One simple solution is to fire him and hire another worker. Some people have edited the files too. The workers inventory is full but they grab the item anyway and it disappears.
I have this same issue! Just posted about it too! My packers and chemist are pocketing my products!

Go into your Schedule 1 Folder, find the property folder, then the employees, go into the employees inventory file and set all of their inventory value to 0. Theres a guide somewhere else on the forums if you need more in depth instructions. It worked for me I had the same issue as you a few days ago.

can confirm this happens with the HANDLER for a lot of things. I had to fire and rehire.

There is a current bug 14/4/2024 where Handler you set to restock your shelf or your packaging desk etc. The handler will pocket the entire shelf and you lose it all.

This is a known bug.

Essentially what's happening is your worker's inventory is full but they're still trying to collect something. When they do this, the item they're trying to collect attempts to go into their inventory but since it's full, it just gets deleted instead. Pretty sure it can happen with almost anything, not just product, like mixers as well.

I just don't mass produce all that much at once. I've found that if I only send 3 or 4 stacks of product through my 7 mixer setup at once it's usually fine. I have handlers moving everything from shelves into mixers, and chemists just operating mixers and moving the finished product along from one mixer to the next, no idea if that helps the situation or hurts it as before I set this up I had no idea chemists could pull things from shelves and put them into mixers.
I entirely stopped using workers because in the end, I do it like 60% faster. Maybe if the dev sees this, he takes it as feedback to speed up the workers a bit. They are slow as fk
had this problem a few times. gotta fire em and re hire them or you can try replacing everything and giving them new routes and stuff. Id say do both to make sure it works
