I would suggest backing up your save file occasionally.

Did you make sure the plants are watered? If you look at the bar you'll see a small green segment (very hard to see admittedly) near the last 10% of the hydration bar. The plant needs to be watered more than that to progress the growth timer.

Next you need to check what time it is. Plant Growth seems to be dictated by the world time ticking down. So if your sitting at 4am in the morning plants won't progress the growth precentage. Which is kinda annoying because while the plants won't continue to grow they will continue to consume hydration in the pot they're in.

How?

Left click start menu, search for run, then type in %LocalAppData%Low
From there click into TVGS/schedule 1/saves/whatever the long number file is, then copy the save file in there that you want and paste it somewhere else for 'just in case'.
have u sleeped? maybe u just have 4am, then ur plants cant be a bigger
backing up save file isnt going to fix a bug like that, I would try moving the setup or setups that are not growing if you can, once it starts growing you wont be able to move the pot unfortunately , maybe try on one of the plants dumping a bottle of speed grow on it.. see if it makes it change its state, might force it out of the bug its in ?

also try verifying the game files thru Steam to ensure everything has been updated properly

and post this on The Discord , its likely to get seen quicker over there, and perhaps the Mods have seen others talk about this issue and may know a way to fix it or other ideas

I did on the discord. How do i verify if its been updates properly?
i agree with the people above if your plants are watered and its not 4 am, also defiantly back up the game on PC and cloud the only thing i would do is back out of the game and go back in and see if that fixes it i know sometimes i got to do deals with clients and they only say hey or morning/afternoon/evening what ever time it is in game. and i have to save and back out and restart the game.

Try using some Instant Grow on the plants to test if they’re bugged.

Normally, they need water or special lighting (especially with advanced pots) to grow properly.

If you’ve already got those set up and the Instant Grow doesn’t trigger any changes, then it's likely a bug.

Also, plants won’t grow past 4 AM in-game time until you sleep, so keep that in mind!

Yeah if you're growing them in the pots from the RV you need the suspension rigging and the lamps to allow them grow. Otherwise the contained potting tents has all that automatically.
