How do i unlock the production of "coke"

What you can produce is tied to your level. You need to be Enforcer 1 to get access to the Cauldron to cook it.
You also need to unlock the Supplier in the Docks to buy Coca seeds.

Cocaine won't be accessible until you unlock the Docks area and the rank of Enforcer 1 and getting the supplier Salvador.

enforcer is just from leveling up, get to cooking and distributing, it'll come naturally.

the supplier comes after you've become friendly with a certain person, i don't recall who.

Ah, that's fair, it's okay, that was a good explanation without spoilers-- as long as I can transition to coke from the weed dealing / do both and have it seem like it was paced correctly

I think properties are available from the get go. You just don't really learn about them until a few ranks in. Or at least have to be a certain rank for the Real Estate store to be available but otherwise, if you have the money on your card, you can buy them regardless of the customers and your rank.
