Do I miss something?
Currently, I'm "Shot Caller II" and everything I do is filling stocks so my employees can do their job, supply my dealers an selling (absolutely legal and harmless) stuff to everyone who is not assigned to my dealers...

Unlocking "Suburbia" is still quite far away and I ask myself, if I miss anything which could add some variety?

Well if you're only selling "absolutely legal and harmless" stuff, it sounds like you're missing about 2/3rds of the content...

The road to suburbia is quite a grind. The gameplay loop doesn't change from here unless if you change up what you produce. Can also mess with the cops for xp if that floats your boat.
That is the plateau if you set your operation up in that manner at this time. I did the same.
I Have the noose beers set up running on it own making heavenly grade sweet diamond and the rock making high grade girl scout durkle, which is a lot of stock to keep up with, dont have time for green because I would have to do that on my own mostly.
I went further and still had fun because I was playing with friends doing silly stuff but we have stopped now.
With the map expansion, things like turf wars and more products to produce coming down the line, I would stop if you feel you have peaked and give it 12 months.
Its still in EA but it hit the ground running, I believe it will only get better with more content but these things take time.
Play connect the dots in your contacts menu.
Tip : Don't look up online for "best mixes", researching new mixes and getting rid of useless weeds is a big part of the game and looking online for the best or most optimized mixes kills at least half the game experience IMO

the game absolutely becomes restocking simulator. youre not necessarily playing wrongly. if anything youre on the right track. its just how the game is designed, intentionally or not.

I also had no idea this is also the case with "legal" items. what items are those?

I think that "absolutely legal and harmless" is just a joke because he's selling addiciting cocain that will blow customer's heads off

You do end up restocking with nothing left to unlock gameplay-wise after a while. Still, the world is a sandbox, you can make a new playthrough and try playing a different way. Making amusing mixes can be fun. The game can be a lot laughs with the right people. A very unique game when you start out but it does fizzle as you unlock everything and go back to a very shallow core gameplay loop.

my stuff is also harmless, unless they back out from deal, then i harm them with a few gun shots xD
